What is haggis? I heard someone describe it this way: you remove all the valuable meat from either a sheep or a lamb and what remains are the organs. Pull the stomach out and grind up the brains, heart, lungs, and stuff that into the beast's stomach along with a variety of seasoning. Tie it off like a balloon. Boil the concoction all day and serve it sliced on top of tatties (mashed potatoes) and neeps (turnips ). I loved it and ate it often.
