What is haggis? I heard someone describe it this way: you remove all the valuable meat from either a sheep or a lamb and what remains are the organs. Pull the stomach out and grind up the brains, heart, lungs, and stuff that into the beast's stomach along with a variety of seasoning. Tie it off like a balloon. Boil the concoction all day and serve it sliced on top of tatties (mashed potatoes) and neeps (turnips ). I loved it and ate it often.
We spent three hours at the Culloden battlefield. They have a very impressive museum and because we've been very engaged in a historical novel that takes place at this time, I found the experience of simply being there, very moving. If you ever make it to Inverness, I encourage you to visit this museum.
The British government lost 50 soldiers in this final battle on British soil in 1746 soil, while the Jacobites lost over 1,500. In two hours, the battle ended with the bodies of the Clansmen stacked in some places four high. There was a video reenactment of the battle and was so powerful you could feel the emotions of the viewer throughout the room. My wept silently. Such a great loss.
